Galician olive oil
Fruit of the most traditional olive trees and the oldest and most typical indigenous variety in the Alentejo, this oil reveals all the potential of the unique Galega. It is one of the most appreciated oils, praised for its elegance and smoothness on the palate. Of reduced production and with a particular nutty flavor, the olive oil from the “Mouchão Velho” and “Dom João” olive groves is velvety, with notes of sweetness and very refined.

Very resistant to drought, Galega olive trees, many of them secular, and in a total of 31 hectares, generally produce a small amount of olive oil which results in a more concentrated and full of flavor olive oil.

This special and unique ‘azeite’ is an extra virgin olive oil with very low acidity and derived from very old olive trees, most part of them with more than 100 years, of the Galega variety. The olives are handpicked and arrive at the olive press within two hours of picking. After the mechanical cold extraction, the oil is decanted into stainless-steel vats and allowed to rest for 4 to 6 months before bottling.
